The goal of the research is to develop innovative treatments based on the application of non-thermal pulsed electric fields (PEF) for the production of innovative fruit and processed products, with high quality and nutritional characteristics .
The activities will be structured into the following phases:
- test on laboratory/pilot scale for the development of process parameters most relevant to obtaining fruit and processed products of high quality;
- test on laboratory/pilot scale of innovative non-thermal PEF treatments for the sanitization and the increase of the functionality of vegetable puree;
More specifically, the research will permit:
- the development of innovative pilot lines for the realization of production processes based on PEF for the preparation of foods of II and IV range;
- the development of innovative fruit and vegetables of II and IV range.
