The research will be aimed to:
Morphological and technological characterization of the germoplasm of olive both cultivated and related to feral forms, present in the National Park of the Island of Asinara. The oils, extracted using a small-scale industrial mill from the different tree types, will be classified according to the parameters set forth in the EC Regulation ((Reg. No. 2568 on the characteristics of olive and olive-pomace oils and on their analytical methods. Off. J. Eur. Commun. 1991, L24, 1-83). In addition, the nutraceutical and commodity value will be evaluated by the determination of free fatty acids and polyphenolic spectrum.
