The research program includes double analysis of the antioxidant component of strawberry fruit, Fragaria x ananassa cultivar Camarosa, cultivated in open field at 1200 m and pots at different altitudes (500, 700, 1400 m). The same analysis will be carried out on fruits of Fragaria vesca, cultivar Regina delle Valli, cultivated in the same conditions and on fruits belonging to two raspberry cultivars cultivated in open field. The following parameters will be determined: (i) total soluble polyphenols, (ii) total monomeric anthocyanins, (iii) radical scavenging activity using the radical model diphenyl-picryl-hydrazyl (DPPH), (iv) antioxidant activity using FRAP method, (v) determination of the most important anthocyanins, flavanols, flavonols and phenolic acids using liquid chromatography coupled with tandem mass spectrometry (LC-MS/MS), (vi) determination of the most important soluble sugar using liquid chromatography coupled with light scattering detector (LC-LS).
